Valerie A Moore This is a terrific idea! I am a meat eater, but cannot afford it all the time, so I have a lot of meat-free days. I'm always on the hunt for EAT-WORTHY meatless recipies. BTW, My niece is a flat-out V-gan. She has a T-shirt with two hunters carrying a big carrot.

Today had Khao Soi noodles for lunch, never had the variation with no chicken...Got to say it was fantastic. If not better than the meat version. It's originally Burmese in origin, though Lanna (Ancient Northern Thailand) have claimed it as their own. tastes more Bangladeshi / Indian to me. Anyway keep you eyes out for ... it, it truly is amazing.

Dani with all this talk of christmas I am intrigued how a meat free monday is gonna work when it falls on christmas day...It is naturally doable as many veggies including myself have proven (I had a meat free roast with loads of different types of potato and other good veg and my home made yorkshire pud which filled me up p ...retty well) but it was just one of those random things I was thinking about
